Banana Hemp Muffins

These muffins are packed with protein ­ eat them for breakfast or as a great snack throughout the day! Makes about 24 muffins!

Ingredients

1⁄2 cup coconut oil
1⁄2 cup apple sauce
1 cup cane sugar
3 cups mashed ripe bananas (6 bananas)
4 eggs, well beaten
2 1⁄4 cups spelt flour
1 cup Just Hemp Foods Hulled Hemp Seed
2 tbs baking soda
1 tsp salt

 

Instructions

Preheat oven to 350°F (180°C). Cream oil, applesauce and sugar until light and fluffy. Add bananas and eggs and beat until well mixed. Mix dry ingredients and blend with banana mixture ­ but do not overmix. Pour into muffin tin liners. Garnish with chocolate chips and/or Just Hemp Foods Hulled Hemp Seed to give your muffins a little appeal. Bake for 20-­25 minutes; test with toothpick (toothpick should come out of the middle clean).
