Spicy Chicken Sweet Potato and Hemp Soup

This warm and spicy soup is great to warm you up and full of protein!

Ingredients

2 tbsp frying oil (grapeseed oil)
2 chicken breasts cut into cubes
1 onion chopped
3 cloves garlic minced
1 Tbsp ginger root minced
1 green jalepeño, finely chopped
1⁄2 tsp turmeric
2 tsp cumin
1 tsp coriander
1 can coconut milk
3 1⁄2 cups chicken stock
1⁄2 lemon juiced
2 sweet potatoes cubed
1⁄2 cup Just Hemp Foods Hulled Hemp Seeds

Instructions

In the bottom of a large soup pot, fry the chicken breasts, onion, garlic, ginger, jalapeño, turmeric, cumin, and coriander on medium heat for 3­5 minutes. Then add the coconut milk, chicken stock, lemon, sweet potatoes, and hulled hemp seeds. Bring to a boil and turn down to low heat. Cook on low heat for 30 minutes. Blend in a food processor. Garnish with cilantro and hulled hemp seeds.
